The Mounties ALWAYS get their person Kathie! I hope they can find our Karen safe and sound. If and when they do we have another reason to have cake.
We host games day tomorrow so we went to Costco to pick up some spring rolls. We tried to time it so we got there after the door crasher crowd had been and gone and before the lunch crowd got there. Well, we DID time it just right. Lots of parking, not over crowded. In and out in no time.

Good timing on your Costco trip Lee!!

We’ll be on our way soon to the kids house for a BBQ.
I’m bringing the ribs that are in the oven now and will get out on the grill at their house to char-them up a little. Easy late lunch.

I was sure hoping we’d see a quick note from our Karen. I’m starting to be more concerned.
How was that BBQ Kathie? The ribs sounded good. I bet you had another open window night! It was a delightful 60F at 5:45 this morning. It looks like it could feel anywhere between the mid 80’s and 90 here today.
Maybe a little more luck than science at Costco Mike. Either way it worked out well.

YUP, not like our Karen to not stop by after a few days even to just say HOWDY! Hope all is well.

BBQ was perfect. Simple and good. Plenty of ribs. Sure glad I bought them in stages when I see them on SALE for $2.99 a pound. Doesn't hurt the pocketbook as much. I had 4 slabs in the freezer just for occasions like this one. We enjoyed the Father's Day.
Mark is still trying to get his DAY's and NIGHT's worked out after his long trip. He showed us pictures on their Big TV of beautiful places the workers visited. CLEAN and friendly cities. Beautiful TALL buildings. Glad he was able to go and see fellow team members in person again.

Not much going on today. I'm going to go out and put some fertilizer on my plants.

Enjoy your day folks. It's going to be a HOT week around here for sure.

The roll down outdoor deck shade got delivered today. Haven't unrolled it yet to see if it's all
in one piece! :emoticon 0136 giggle: It will help keep the Sun out of our eyes when we're eating dinner on the deck.
We used to have one for years, but it finally just gave up! The sun coming down in the West can really make it difficult to eat out there even with the big awning.

We haven't put up the awning as of yet because the siding project would just make us have to take it down. Not getting into that kind of project.

Hope everyone had a good day. It was a HOT one here. Art worked on ONE of the SPRINKLER HEADS that is down on the lower level. It got taken over by thick tree roots.
He'll be buying a new one tomorrow.

I had to break down and turn on the Air Conditioner a little while ago. No wind outside to open the windows tonight. I looked up the temps for tonight and it will be in the 69-70F-and I just wasn't going to take a chance of it being too hot. So much for saving money on the Electric bill! :rolleyes:

I see where my home town Wheeling W Va was flooded yesterday. I remember once when I was a teenager it got flooded. We always lived on a hill and we never got flooded/ My sister lived in N. Wheeling and it was a y early occasion.
69- 70 is a very warm eveing, I hope it will cool off for you K2. Good luck putiing up your deck shade.

I guess the “sweet dreams” you sent kinda worked Kathie. I didn’t get up until 5:30. Ava and I hit the street about 5:45. There were already a lot of folks out for an early walk before the predicted heat of the day starts to move in. With the humidex they say it could feel like 97F by late afternoon.
Because I worry I sent our Karen a note yesterday. I heard back from her last evening. She is OK. She is really busy with projects for Barb, Jane and St. Mary’s.
Our walks were good Mike. Yesterday we hosted games day so I never made it back on. We visited Wheeling many, many years ago. I recall it being a pretty little city right on the river.
We have our AC ON Kathie! Neither of us is a fan of the heat. It, the heat, really plays havoc with Lu-Ann’s PD meds. We have been enjoying our little screened back porch sitting area. We do have a ceiling fan out there so it helps keep it cooler. The back of the house faces due east so we get the morning sun on the back. Tell Art to stay well hydrated if he’s out in the yard in the heat of the day.

Fishflies, or Mayflies, are starting to show up. We get them by the millions every year. They are attracted to light, like signs at businesses and street lights. Often you can’t see a sign because they are so thick! It’s good to have them because it means the lake is healthy. But my gosh they stink. Fortunately they have a very short life span and the season doesn’t last very long.
The restoration people should have Jim and Gail’s basement insurance work done by the end of the month. No wonder insurance costs are so high. If they can’t find flooring to match the rows they took up they told Jim they would redo the whole basement floor so it matches. He quietly asked me yesterday if I could go over today and help him move some furniture. Of course.

Thanks Lee for checking on our Karen. i had a dream that she was in and she was working for a Cruise Ship! Too funny. I ate 2 Coconut Macaroons late last night and that might have triggered the funny dream.

Lee: I like your back patio. Nice to have a fan there. The FISH FLIES have to be horrible since you live so close to the water. It does show that the water is healthy from they say.

Karen don’t OVER WORK YOURSELF in your Florida heat. Miss you.

Roasted Butternut squash soup​



This roasted butternut squash soup is the perfect blend of creamy texture and rich, caramelized flavors. Ideal for fall and winter, it combines sweet butternut squash with savory vegetables and warming spices to create a comforting and nutritious meal.

Ingredients

  • 1 small to medium-sized Butternut Squash
  • 7 fl oz Coconut Milk 200 ml
  • 1-2 Red Onions
  • 1-2 Bell Peppers
  • 1-2 heads of Garlic
  • 2 Tomatoes or 1 cup of Cherry Tomatoes
  • 1 1/2 cups Vegetable Broth 350 ml
  • 1 tsp Fresh Ginger optional (grated)
  • Olive Oil enough to drizzle over vegetables
  • Fresh Cilantro for garnish

Seasoning:​

  • 1 tsp Black Pepper
  • 1 tsp Ground Cumin
  • 1 tsp Paprika
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 tsp Chili Flakes optional, to taste

Instructions

  • Preheat the Oven: Set your oven to 390°F (200°C).
  • Prepare the Vegetables: You can either peel and chop the butternut squash, or, like I do in the video, simply cut the squash in half for roasting. Note: Halving the squash will require a longer roasting time, while chopping the vegetables smaller will speed up the cooking process.
  • Season the Vegetables: Add the seasonings (pepper, cumin, paprika, thyme, rosemary, and chili flakes) to the vegetables. Drizzle with olive oil and toss to coat evenly. If halving the squash, drizzle olive oil on the exposed flesh. Cover the dish with aluminum foil.
  • Roasting: Roast for about 1 1/2 hours, or until the vegetables are golden and soft inside. If you've chopped the vegetables smaller, the roasting time can be reduced. If you've halved the butternut squash, expect a longer roasting time. For the last 10 minutes, remove the aluminum foil to allow the vegetables to caramelize slightly.
  • Blending: Once roasted, scoop out the flesh of the butternut squash (if halved) and transfer all the vegetables to a blender. Add the vegetable broth and ginger (if using), and blend until smooth and creamy.
  • Cooking the Soup: Pour the blended mixture into a pot and place it on medium heat. Stir in the coconut milk and cook for about 2 minutes, allowing everything to warm through.
. Garnish with fresh cilantro, a drizzle of coconut milk, and a pinch of chili flakes if desired.

I’m a fan of cold soups Kathie. A nice gazpacho comes to mind. I’ve had a cold carrot/coconut soup too. Take it easy at PT today. With projects for Barb, Jane and the church I’m not sure Karen has time to work on a cruise ship.

I should have clarified about the flooring. Jim has a box so he was able to provide the restoration company with all of the info they needed. Plus, he got it from Home Depot and when he checked it is still readily available.
It feels like 93F here. Sadly it’s a humid 93F.
