Carnival Dinner & Dessert Menus

Somebody help me with the descriptions on the menu. We are not really cosmopolitan folks and need help with what some of the menu items are.

"CHILEAN SEA BASS
Lobster Nage-braised sea bass over young spinac and mango salad "

(What is Lobster Nage-braised sea bass?) What's Nage?


GRILLED LAMB CHOPS
double cut lamb chops
served on five-bean cassoulet and rosemary jus

(What is a cassoulet?)

Educate me.
 
Nage- is probably mispeeled for Sage

and a caselette is a small casserole.

Friend of mine adores shrimp but only saw delta prawns. She did not know these were shrimp
 
I'm lost on this thread.
Help me with this: what are my dinner menus (quote the day numbers) for my 5-day Holiday cruise out of Mobile AL, with the Gala Dinner on the second day?
