Do you want to do other siteseeing/shopping? See how long each thing takes to narrow down your choices. Get rid of things you can do in other places. We are going on the Altun Ha trip. I read a couple very positive reviews about it. I guess it all depends on what interests you the most.
 
We just got back from Belize. We did the cave tubing. It is about a hour ride out and a hour ride back. It was a very good trip and would highly recommend it.

BTW, we booked through actionbelize.com and did the exact same trip as the ship tour. Our cost was $49/each compared to $89/each.
 
Were you with the same group of people that booked on the ship. My wife is not comfortable in the water is the tubing ok for someone who is a nervous swimmer?
 
Cave Tubing is AWESOME!!! Definitely the best trip in Belize. Our trip was with Belize X-STREAM Cave Tubing and we had people of all capabilities. They ask you if you can swim and they provide life vests to those who want them. We had one lady who didn't want to admit that should couldn't even swim but even she did great. You really don't need to swim, you are on a tubing and you can wear a life vest just incase but the chances of falling out of the tube are slim to none.

I would look at a company like X-Stream because they keep the group number under 14 so the guide can offer extra care for those who need more assistance. Our guide stayed near the "non-swimmer" through the trip to make sure she felt safe.

Another vote for X-stream if you want to do cave tubing. Don' t do it if you don't like being outdoors for a long time or hanging out with bats. My wife is a non-swimmer and our guide stayed close to her and she survived. The ship's tours are more expensive and too many in the group. There will be a smaller group that have signed up with X-Stream from your ship and the guides will make sure and get you back in time. Carnival took our picture and we weren't even with the ship's tour. The guides cut fresh pineapple that morning to give you after the tour that melts in your mouth.
 
Can you expand on "Hanging out with bats" ? We are doing RCI Enchantment of the Seas Western Carribean itinerary in January 2005 and I was really looking forward to this excursion, but I am not a bat fan. If they are just flying around overhead, that's ok, but if they are swooping down onto my head, that would bother me.

They won't bother you. They hang out on the ceiling of the cave. When you reach the darkest point in the cave the guides have you turn off your head lights so as not to disturb them.
