What do you have for dinner when it's this hot and miserable out?

It was 94* here today. I hosed down Kiefer, misted down the birds, and let the cats sleep in the sinks. I took a quick nap in my cool dark bedroom, something I don't usually do.Tonight for dinner, we will be having a salad. A fully loaded salad. And blueberries, honeydew melon and cherries for dessert. It's too hot for anything else.
 
glo, we went out shopping for some solar lights, then we stopped and had fish and chips at a local place where you can sit outside and eat them :lol
but for most of the last two weeks I have been eating watermelon. I have worn a path to the Loo.....
 
We had honeydew & watermelon . Last night it was Caesar salads. Sandwiches tomorrow maybe.
 
BLT's with home grown tomatoes are the best in the summer. And so refreshing. A little too early for my own, but I am hoping for some nice ones from the Farmer's Market.
 
It has been rather mild here this week. Sorry you are having it so warm.

When it gets too hot around here we have salads as well. Our favorites are chef, shrimp, grilled chicken, steak and blue cheese crumbles....

You might want to try some strawberry soup. It sure seems to hit the spot on a hot day, I don't have my recipe handy but just did a search on the internet and there are plenty there to try. Mine is pretty similar to this one:

COLD STRAWBERRY SOUP

1 1/2 c. water
3/4 c. light-bodied red wine (rose)
1/2 c. sugar
2 tbsp. fresh lemon juice
1 stick cinnamon
2 qt. strawberries, hulled and pureed (reserve a few for garnish)
1 c. heavy cream
1/4 c. dairy sour cream

Combine water, wine, sugar, lemon juice and cinnamon stick in a 5-quart saucepan. Boil, uncovered, about 17 minutes, stirring constantly. Add strawberry puree and continue boiling, stirring frequently. Discard cinnamon stick and cool cooked mixture. Whip cream and stir in sour cream. Fold into strawberry mixture. Refrigerate several hours. When ready to serve, garnish with reserved whole strawberries. Yield: approximately 8 cups.
 
I made a honeydew melon soup the night before last. No sugar, used a tbl. of honey. And greek yogurt. It was MILLENIUM WORTHY as my DH put it!
 
It was too hot even for the salad. I just layered some mozzarella, tomatoes and basil, and had some blueberries, melon balls and cherries on the side. It was perfect, just right.
 
We had Pita Pocket BLT's: Pita Halves, cucumber, red onion, tomatoes, romaine lettuce, bacon, with ranch dressing.
 
I had toaster waffles with strawberries. Didn't have any vanilla ice cream to go on top, but it was nice anyway. Last night we had BLTs. Tomorrow we will be having crab Louis salads.

Cold cucumber soup, grilled veggies, fake bacon blt's, spinach pies, vidalia onion pies, tomato sandwiches, cereal. Pretty much, if it can't be cooked outside, other than the pies, of course, we don't have it.

We have recently baked french fries out on the gas grill, and something else that we normally only cook in the oven, but right now I forget what it was, anyway, both worked perfectly and I don't know why we didn't think of it before, using the gas grill as an oven. So we make try the pies outside.
 
Corky your menus always have my mouth watering and wondering what things taste like. JEM pita sounded pretty good. We had chicken enchilados we picked up at deli Thursday. Good . Today I am opting for grilled hamburgers or salad. Potatos and meat man will probably agree with hamburger. Just not hungry right now(finally tuime to diet)
 
Thank you, Maw. During the summer, the only cooking apparatus, other than the top of the stove, that we try to turn on is the toaster. The crock pot works wonders, too. We also eat a lot of cold pasta dishes that we put cold grilled veggies in and then add a little olive oil, salt, pepper, parsley, whatever, a lot of times, it is just to clean out the fridge. With a little bit of fresh parm. cheese shaved over it, yummo and dunno. :lol
 
We went downtown for our annual Rib Fest. We had BBQ pork sandwiches, "fair fries" and a diet pop.

DS and Brooke came home for it. D-i-l had to work. :( Had a good time. Got to introduce Brooke to many friends that hadn't met her yet. She'll be one next month. :)

Yeah, sure I'll do that. I forgot about that perk of being a C@. Now that I'm on a whole grain, fruit, veggie, low/no sugar diet, I usually only cook out of the Weight Watchers or South Beach Diet cook books.
