I haven't been on the Island Princess either, however, I had the same issue for our trip on the Diamond Princess. I called Princess and the customer service person just changed the bed configuration to a "queen" in their computer system. The PIF online immediately changed from "non-converting twin" to "queen". My guess is that the only "converting" beds they have are the sleeper sofas in the suite rooms. Thus, all the other beds are "non-converting"??? I'm also guessing that the bed configuration status only helps their ship's staff know if they should push the beds together or not. Just my guesses.
