What a fabulous guy and a fabulous idea! 

Agree with the above posters - don't overbook your time - leave some time to relax and just let her stare at the ring in the moonlight!

Snorkeling is great in any of these ports and think you can find people right off the ship who are reliable and will get you there and back on time.  This is less expensive than ship's excursions.
