We ate at the SS United States this past week. We chose to make our reservation on one of the Informal nights. It was after a day in port (Skagway) where we had to be back on the ship by 7:30 pm anyway. We made our reservation for 8:30.We chose wine off of their menu, so I can't help with your second question. I don't see any reason why you shouldn't bring your own wine if that's what you prefer. Just know they may charge you their uncorking fee.Dinner and service there were wonderful, by the way!Diane
