Shore Excursions

We are taking our 1st Viking Cruise in April on the Jupiter (an Ocean cruise) & we are VERY excited! We just booked it with a lovely discount & most of the shore excursions we are interested in are already booked. We will be going to Barcelona, Murcia, Granada, Porto, Falmouth, Portsmouth, Paris, Bruges, Amsterdam, & Bergen. We only speak English, but will have Google Translate. Here are our questions:
  1. Can we just disembark, take a taxi to a place we wish to see & just buy the tickets at the gate?
  2. Is this safe?
  3. What else should we be asking/considering?

Hi- we are taking this cruise in September. What did you do for excursions? What did you enjoy the most and did you have any type of difficulties? Thanks
