Santorini is beautiful but a tough day, depending on the condition you’re in, whether you’re climbing, waiting for the bus, the ferry or the tram down the hill. I researched the heck out of it, but still was not prepared for the walking and crowds. We did the same as you. We parked ourselves at a table overlooking the ocean and enjoyed drinks and lunch before heading back to the bus. It was perfect!
