we have dinner guests- Best Friends Gary and Marie.. and 3 of the 4 DD's are coming home.. so I have TWO Pot Roasts in my super size slow cooker a churning..

looks like gravy, baking powder biscuits, mashed taters, peas, carrots...

and for dessert

Home made Tapioca pudding ( my late Grama's recipe).. and Chocolate Crusted cheese cake with cherry toppping..

and for cocktails we have 'rita's, and beer.

me I have wine ,and no desserts . and no gravy nor biscuits, nor taters...:(.. oh well low carbs low carbs..

:wave Joanne - Fantastic menu you have there! Tonight I think it will be takeout since dh won't be home until 10 p.m. but tomorrow night will be dijon crusted pork chops with roasted potatoes, onions, garlic and bacon. Dessert around here lately has been ricotta pie.

Home made Tapioca pudding... I don't know how anyone can eat the packaged stuff and the alreadymade in the little cups frightens me. Same goes for puddings & jello cups.

Since it is 7 AM here I have no idea what will be on the dinner menu tonight.
 
Not sure at this point, but maybe bbq'd chicken? We haven't had it for awhile, and we really enjoy it. Bought some lovely asparagus yesterday so will have that as well, and maybe a salad.

going to dinner at friend's house tomorrow, not sure what they're having but really looking forward to going and visiting!!

Gosh you din din sounds good Joanne. Love tapioca home made my late mother in law was a horrible cook but she made good tapioca and had it for kids every time they came over. Her other good dish was Green Rice made every Holiday meal special for us. We will have either Pizza (if Jim and Brenda are here) or the fillets Paw thawed yesterday last of Christmas steaks.
 
I was just discussing that with Leatherneck....not sure yet. We had spaghetti last with...GS Jacob was here and it wa something easy. I am cooking a big meal tomorrow. Picked up a 13 pound Prime Rib Roast at BJs and will have a family dinner tomorrow in celebration of DD Mindy's birthday...salad, Mal's creamed spinach and red mashers will round out the meal with chocolate cake with chocolate icing...which I have to make sometime today. Chicken is sounding good to me about now for tonight. If it stops raining maybe BBQed :chef
 
We have a batch of hoppin' john cooking for lunch and will have cornbread with it. It will last us for supper, too. So we are set. :)

Cruise cutie - your dinner sounds wonderful. Would you share the tapioca recipe?

And Maw, green rice? Could you share yours as well? Maybe that is a good St. Patty's Day dish?
 
We will be having broiled pork chops and caulitators. I'm a low carber as well. I think I will have a large salad as well.
 
I've got to hit the grocery store today, so I'm trying to decide. I make my menu for the week before going to the store, and it usually works out pretty well. Some of the ideas above look pretty tasty! :)
 
Everything sounds so good. Saturday night is a no big cooking night around here. It is my night after a long week to say I'm off duty, that is after the Saturday day housework is finished. We don't do a big meal in fact sometimes we have pizza, burgers, or order something in. I can remember when we were kids that every Saturday night was a Hotdogs and beans night. I guess that is where I got my night off habit. Time to relax and regroup.

Not sure yet...we had friends over for a poker night last night and we ordered Chinese and pizza. Have some leftovers. I also have a big pack of chicken cutlets I bought on sale, so might either make chicken teriyaki or lemon chicken. And then...DIL has coupons for buy one get one free meals at Bennigans and she said maybe we'd do that tonight which sounds like the best idea to me :lol Joanne, I would also love to have your tapioca pudding recipe, and Maw, the green rice sounds like fun. Please share. I am having DIL's family here for Easter dinner and they are VERY IRISH and sounds like something fun and different to serve!
 
cycofan - hoppin' john is: black eyed peas, hot sausage, onions and rice. I normally use dried black eyed peas and sort, rinse and soak them the night before and then start adding. But I only get that fancy for my New Years Day gathering that I have.

Here is how we did it today:

2 onions chopped and put into a dutch oven
1 pound hot sausage
Brown and cook the two together

Add one 32 oz box of vegetable broth
2 cans of black eyed peas, juice and all
Boil for about 30 mins to get all of the flavors going

Add one cup of rice. Today I used a Wild mixture of 4 different rices. But a cup of white is fine, and is what I normally use. Bring back to a boil, and then turn heat to simmer, stir once more and cover. Let this cook up for about 30 - 45 mins

If it becomes too thick for you, you can add some water. We like ours on the thick side.

Done and enjoy!!! :)
 
We're having beef and noodles with mashed potatoes tonight. Maybe some bread pudding for dessert.

It's still snowing away up here in NW Ohio and warm, comfy foods sound good.
 
Thanks, Corky! That sounds yummy, and believe it or not, I could sub lean ground beef and some spices for the sausage, use brown rice, and it would be OK for my weight watchers plan. I"m putting it on the menu this week! :)
 
Corky, that sounds good. 2 ?'es: when you say 1 lb of hot sausage, do you buy the links, take the meat out of the casings and brown? And the rice, I only use minute rice. Do you cook the rice, then add it, or do you dump 1 cup of uncooked rice in the pot?

Karry - I always put in uncooked rice. I guess, if you had leftover rice though, that you could use that. :)
 
We always have hoppin john at New Years but ours is just rice and black eyed peas. That is the way my grandmother's family from SC always did it.

I don't have to cook tonight because it is my companys employee appreciation dinner and this year they are doing a buffet dinner and casino night! Maybe I will try to pretend that I am on a ships casino.
 
Karry - sorry, I forgot to answer your 1st question. Sausage - I buy Tennessee Pride hot sausage in the tube.

ewheelock - that sounds like a nice evening. Nice that your company does that for you all. Enjoy!!
