Thanks for the suggestion, K2. Only problem I have with your recipe is substituting those sponge cakes for a real biscuit. The result is okay but not as good as what I would consider an excellent strawberry shortcake. It did bring back memories of the worst one I had many years ago. We were at Disney World with our kids when they were little and we went to theHoopy Do Review. For dessert, we ordered what the menu called a strawberry shortcake but when it arrived it turned out that instead of real strawberries they substituted Smucker's strawberry jam. Perhaps my only bad memory from any of our visits to "the happiest place on Earth".
