Every night Carnival offers food. I think most times it's called the Midnight Bistro - or something like that now, instead of Buffet. We've noticed most ships have gone to burger, hot dogs, fries a salad or two, a couple of desserts and fruit. They are NOT the nightly buffets of years ago, where there was a theme each night with lots of stuff to choose from. Even so they have pretty good burgers and hot dogs. (There's usually one other hot dish as well.) As everyone else said there is the Gala Buffet - in one of the main dining rooms, and the Mexican Buffet - that one is usually on the Lido deck pool side, and the chocolate buffet is sometimes held in the mid-afternoon (we've missed a couple because we weren't aware of that). There is 24 hour pizza and I think the ice cream machine is on most of the time, too...so there is always something to eat! Sometimes we've seen more kids at the midnight buffet than adults. It's an interesting time...we've seen some drama at the midnight buffets too! Oh...check your Carnival Caper for the times as it is sometimes late due to shows or early due to port arrival the next day.
