I know on Princess they have started and Ultimate Ships Tour that includes a tour of the bridge for $150. I have heard that though pricey, it is very good and there are some goodies at the end such as a plush robe, etc. Not sure if Carnival offers something similar. Word is on Princess you need to see the Purser's desk immediately after boarding and put your name on a list to see if they will select you for the tour. Might do the same with Carnival.
