On Barbados definitely do the Swim with the Sea Turtles.  Go online to TIAMI cruises.  They have large catamarans, they serve lunch, have beach time, pick you up at the port and bring you back and serve you a WONDERFUL lunch, Mimosas in the morning and Rum Punch on the return trip.  You see flying fish too!  Had a GREAT time!
